Buttermilk Pancakes

You can't beat a tasty, indulgent plate of buttermilk pancakes!

INGREDIENTS:

  • 2 cups flour

  • ¼ cup granulated sugar or sugar alternative

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp sea salt

  • 2 cups buttermilk

  • 2 eggs

  • 3 tbsp butter, melted

  • ½ tsp vanilla

  • bananas for topping

  • butter for topping

  • maple syrup for topping


INSTRUCTIONS:

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  2. In a small bowl, whisk together the buttermilk, eggs, butter, and vanilla.

  3. Using a spatula, combine the dry and wet ingredients until batter is smooth. Be careful not to overmix.

  4. Heat a griddle or non-stick pan on medium-high and add ¼ cup of batter for each pancake. Flip when batter bubbles.

  5. Top with butter and bananas, drizzle maple syrup over, and enjoy!
