BBQ Lentils with Spinach and Radishes

Here's an incredibly easy and simple recipe, perfect for family weeknight dinners or meal prep lunches! Just grab some lentils and your favorite barbecue sauce for a flavor-packed plate of deliciousness!

 
BBQ Lentils with Spinach and Radishes

Prep Time: 10 min

Cook Time: 30 min

Total Time: 40 min

Yield: 4 servings


INGREDIENTS:

  • 1 cup lentils, rinsed

  • 3 ½ cups water

  • 1 cup BBQ sauce

  • 4 cups spinach

  • 1 tbsp avocado oil

  • ¼ tsp sea salt

  • 2 cups radishes


INSTRUCTIONS:

  1. In a small saucepan, bring water to a boil. Add in the lentils, bring it up to a boil, turn heat down to medium-low, and cover to simmer for 25-30 minutes until tender.

  2. While the lentils are cooking, heat the oil in a large pan. Add in the spinach and turn heat down to medium-low. Wilt the spinach and add in the salt right before finishing.

  3. Slice the radishes into thin coins.

  4. Once lentils are done cooking, drain and add into a large bowl. Mix in the BBQ sauce until well combined. Adjust to taste.

  5. Evenly divide the lentils, spinach, and radish coins into four servings. Enjoy!
