Chinese Smashed Cucumber Salad | 拍黃瓜

This flavorful Chinese classic is crunchy and savory with a hint of spiciness! It makes an easy and quick side and pairs well with a bowl of rice!

 
Chinese Smashed Cucumber Salad

Yield: 4 servings


INGREDIENTS:

  • 1 lb baby cucumbers

  • 2 cloves garlic, minced

  • 2 tbsp soy sauce

  • 2 tbsp rice vinegar

  • 2 tbsp sesame oil

  • 1 ½ tbsp chili oil

  • 1 tbsp sugar or sugar substitute


INSTRUCTIONS:

  1. Slice ends off cucumbers. Using the side of the knife, smash the cucumbers and slice them in half lengthwise.

  2. Add cucumbers into a large mixing bowl and take a paper towel and dab out any excess water.

  3. Toss with garlic, soy sauce, rice vinegar, sesame oil, chili oil, and sugar.

  4. Plate and enjoy as a side or on rice!
