Chinese Smashed Cucumber Salad | 拍黃瓜
This flavorful Chinese classic is crunchy and savory with a hint of spiciness! It makes an easy and quick side and pairs well with a bowl of rice!
Chinese Smashed Cucumber Salad

Yield: 4 servings
1 lb baby cucumbers
2 cloves garlic, minced
2 tbsp soy sauce
2 tbsp rice vinegar
2 tbsp sesame oil
1 ½ tbsp chili oil
1 tbsp sugar or sugar substitute
Slice ends off cucumbers. Using the side of the knife, smash the cucumbers and slice them in half lengthwise.
Add cucumbers into a large mixing bowl and take a paper towel and dab out any excess water.
Toss with garlic, soy sauce, rice vinegar, sesame oil, chili oil, and sugar.
Plate and enjoy as a side or on rice!
