Chipotle Quinoa Skillet with Chickpeas

1 Keen One Quinoa's Chipotle Quinoa Cup
1 cup chickpeas, cooked and drained
¼ cup roasted bell peppers, diced
2 tbsp avocado oil
sea salt and pepper to taste
½ avocado, sliced
cilantro for garnishing

Follow the directions on the package to cook the quinoa cup.
While letting the quinoa sit, heat oil on high in two 6.5" cast iron skillets.
Once hot, add ½ cup of chickpeas to each skillet and cook for 3 minutes while occasionally stirring to ensure they don't burn.
Once the chickpeas are golden brown, add in the bell peppers and quinoa, dividing between the two skillets. Stir to combine and add sea salt and pepper to taste.
Remove skillets from heat and garnish with avocado slices, cilantro, and a few cracks of sea salt and pepper. Enjoy!
