Radish and Cucumber Summer Salad

Refreshing and delicious, this plant based veggie mix is sure to brighten up the summer season! The radish and cucumbers give a crisp bite, the heirloom beans add a creamy texture, and the mint and olive oil tie it all together. You're sure to enjoy every bite!

 
Radish and Cucumber Summer Salad

Yield: 1 serving


INGREDIENTS:

  • 1 cup radishes, thinly sliced

  • ½ English cucumber, sliced at an angle

  • ¼ cup heirloom beans

  • ¼ cup mint leaves

  • 1 tbsp hemp seeds

  • 1 tbsp extra virgin olive oil

  • sea salt and black pepper to taste

  • microgreens for garnish (optional)


INSTRUCTIONS:

  1. On a large plate, start to assemble the salad. Layer on radishes and cucumbers.

  2. Add heirloom beans and sprinkle on mint leaves and hemp seeds.

  3. Drizzle on olive oil and crack sea salt and black pepper on.

  4. Garnish with microgreens and enjoy!
