Roasted Red Pepper Hummus with Sugar Snap Peas

INGREDIENTS:
For the hummus
2 cups chickpeas, cooked and drained
4 large roasted red peppers
2 cloves garlic
1 tbsp lemon juice
¼ cup extra virgin olive oil
sea salt and pepper to taste
For the snap peas
2 cups sugar snap peas
¼ cup extra virgin olive oil
sea salt to taste
For garnishing
½ cup mint leaves
extra virgin olive oil for garnish
black pepper for garnish
INSTRUCTIONS:
In a large bowl or jar, add in the ingredients for the hummus. Using an immersion blender, process until smooth.
In a separate bowl, toss the ingredients for the snap peas together.
Spread the hummus on a plate and top with the snap pea mixture. Garnish with mint leaves, olive oil, and black pepper. Enjoy!
