Cardamom Roasted Rainbow Carrots

Sweet, earthy rainbow carrots roasted to perfection with the beautiful spice of cardamom! This easy and simple recipe will have you drooling over these vegetables for days on end!

Cardamom Roasted Rainbow Carrots

Cook Time: 25 min

Total Time: 35 min

Yield: 3-4 servings


  • ½ lb rainbow carrots, halved lengthwise

  • 2 tbsp olive oil

  • ½ tsp cardamom

  • ½ tsp cinnamon

  • ¼ tsp sea salt

  • ⅛ tsp black pepper

  • ½ tsp dried parsley leaves for garnish


  1. Preheat oven to 400°F (205°C) and prepare a baking tray.

  2. In the tray, toss the carrots with the olive oil until well coated. Add spices and toss again until fully covered.

  3. Bake for 23-25 minutes or until carrots are tender. Test by inserting a fork. Plate while hot and garnish with dried parsley leaves. Enjoy!
