Cardamom Roasted Rainbow Carrots

Yield: 3-4 servings
½ lb rainbow carrots, halved lengthwise
2 tbsp olive oil
½ tsp cardamom
½ tsp cinnamon
¼ tsp sea salt
⅛ tsp black pepper
½ tsp dried parsley leaves for garnish
Preheat oven to 400°F (205°C) and prepare a baking tray.
In the tray, toss the carrots with the olive oil until well coated. Add spices and toss again until fully covered.
Bake for 23-25 minutes or until carrots are tender. Test by inserting a fork. Plate while hot and garnish with dried parsley leaves. Enjoy!
