Chicken and Sage Meatballs

These flavor-packed meatballs are insanely addicting! Enjoy them on your breakfast plate, cook for weeknight dinners, serve as a party/gathering appetizer, or add to your regular meal prep rotation. They're perfect for everything!

 
Chicken and Sage Meatballs

Yield: 10-12 meatballs


INGREDIENTS:

  • 1 chicken breast

  • ½ onion

  • ¼ cup sage

  • 1 tbsp lemon zest

  • ½ tbsp paprika

  • ½ tbsp onion powder

  • ½ tbsp garlic powder

  • sea salt and pepper to season


INSTRUCTIONS:

  1. Preheat the air fryer to 350°F (175°C) and line the bottom of the tray with a piece of parchment paper that has been poked all over with a toothpick for airflow.

  2. Mince your chicken breast, dice the onion, and finely chop the sage. Add into a large mixing bowl and toss.

  3. Add in the lemon zest, paprika, onion powder, garlic powder, salt, and pepper. Stir to combine, cover the bowl, and allow the mixture to sit for 10 minutes.

  4. Wet your hands and roll two tablespoons of the mixture into a ball. Repeat until you run out of the mixture. Place meatballs into the air fryer, spacing them out. Divide into separate batches to cook if your air fryer cannot hold all of them at once. Cook for 20 minutes or until the internal temperature reaches 160°F (72°C) and they are golden-brown on the outside. Serve immediately or store in the fridge for up to 5 days. Enjoy!
