Tomatillo Salsa Verde

INGREDIENTS:
1 lb tomatillos, husks removed and rinsed
½ onion, diced
7 cloves garlic, minced
1 anaheim pepper, stem removed and halved
1 serrano pepper, stem and seeds removed
1 packed cup cilantro
1 tsp paprika
½ tbsp sea salt
½ tsp black pepper
2 tbsp olive oil for grilling
INSTRUCTIONS:
Heat the oil in a grill pan on high. Grill the tomatillos, anaheim pepper, and serrano pepper for 5 minutes flipping halfway through.
In a high-speed blender, process all of the ingredients until well combined.
Transfer to a bowl to serve and enjoy!
